Breakfast Parfaits are delicious and refreshing. They’re like having dessert for your morning meal. Pick and choose your ingredients to please your family and to shake it up a little bit.
Those beautiful glasses are martini glasses from Crate and Barrel. A friend gave them to me. I don’t drink martini’s but I’ve used them for other delicious drinks and desserts. Why not? Fancies them up a bit.
So in this parfait I chose the items I had available. First, I put one spoonful of blueberries and one spoonful of raspberries in the bottom of the glass. Then I poured over raspberry sugar free jello. Each box of jello divides nicely into 5 glasses. One for each day Monday to Friday. Let it sit over night. I topped with 1/4 cup plain, low fat, greek yogourt, 2 teaspoons granola and 1/2 teaspoon of flax seed.
Now, I put saran wrap over the ones I wasn’t eating right away and topped them as I took them out for breakfast. That way your granola doesn’t go mushy.
You can use what fruit and jello flavours you like. Top with a low fat yogourt to keep within the calorie range and you are good to go. Even my hubby likes them. It kind of feels like you are cheating when you eat one of these for breakfast.
