On Monday, I decided to change up the boring tacos. I ventured into the world of eggplant. It’s a vegetable that I haven’t had since I was a kid. At the time, I remember not liking it much. That’s kids though and our tastes change.
I wanted something yummy but crisp and cool because it’s been so warm here over the past couple of weeks.
Here’s what I came up with
Mexican Style Tacos A La Tina – Under 500 Calories Per Serving

Serves: 4 – 6
Ingredients
- 1 large onion diced
- 1 large carrot diced
- 1 large portabella mushroom diced
- 1 cup diced eggplant
- 1 cup canned black beans rinsed well
- 1 cup no salt added diced tomatoes
- ½ cup water
- 1 pound 90% lean beef
- 1 package taco seasoning mix
- 2 teaspoons crushed garlic
- lettuce and sour cream for serving
Instructions
- brown ground beef with onion and drain
- add carrot and eggplant and continue cooking for 8 min
- add mushrooms, diced tomatoes, black beans and garlic
- continue cooking for about 5 min
- add water and taco seasoning mix
- simmer for 30 minutes and serve over a bed of lettuce with sour cream

Calories per serving for 4 people is approx 360

You know sometimes you go shopping and you get bored of the same meals. I love Nachos/Tachos as does my family. Have never tried eggplant, might opt for the adventure. Love finding new recipes. ty
