Cauliflower Mash – Low Calorie, Low Carb Side Dish #Recipe

As many of you know, I’m always looking for the amazing dishes that taste great but won’t put on the weight. Entrees or side dishes that are healthy and low calorie. This week I discovered cauliflower mash. There are tons of recipes on the internet for this. You just have to find one that you like or mix and match until you find that perfect fit.

First, you want to chop up and boil a large cauliflower. You want the cauliflower soft but not mushy. Next you will mash the cauliflower and strain them again. This will remove excess water. Finally, add all the remaining ingredients and mix with a spoon. Don’t remash or they will get soggy.

A great tasting recipe for those that love cauliflower. I know a lot of people claim these taste like mashed potatoes but they don’t. They are much milder tasting than plain cauliflower but the taste is still gently there. Kids would love them if you sprinkle a nice cheddar or mozzarella cheese over top for them.

Ingredients
  • 1 large head of cauliflower
  • 1 sachet of chicken oxo
  • 2 tablespoons of your favorite cream cheese (I like the garlic and herb)
  • ¼ teaspoon garlic powder
  • pepper to taste

Instructions
  1. Boil chopped cauliflower
  2. Mash and then strain
  3. Mix in oxo, cream cheese, garlic and pepper
  4. Stir to mix and serve hot

Approx 83 calories per serving (can be reduced with a low-fat cream cheese) Low Calorie Low Carb

    I bet lots of kids who usually don’t like to eat their vegetables would gobble this up in a heartbeat. The cream cheese would make it nice and creamy too. Great recipe!
