I watch a lot of cooking shows and just love Chef Michael (Seriously! Darned cute but don’t tell hubby) My culinary skills are improving greatly just by watching and listening. Which of course is the only reason I watch his show. To learn! Seriously!
He made a very simple clam chowder topped with a piece of salmon that I want to share with you. I made it easy peasy and you can too!
- 1 onion chopped
- 4 cloves garlic finely chopped
- 1 stick celery
- 1 small can clams
- ¼ cup chicken stock
- 1 cup milk or cream (half and half whatever you have)
- 1 grated potato
- 1 bay leaf
- 2 6oz salmon fillets cut in four pieces
- ½ package bacon chopped
- 2 green onions chopped
- Cook bacon into crisp bites and remove from pan
- add salmon to pan and cook about 2 min per side remove
- add onion, garlic and celery to grease and cook about 5 min
- add chicken stock and stir to get bacon bits that were left stuck to pan
- add canned clams (baby) along with juice
- add 1 cup of milk and stir
- add grated potato cook about 10 min
- add bay leaf and salmon, cover and cook 5 min
- remove salmon
- add bacon and grn onion cook for 2 min

Oh I am so addicted to clam chowder that it’s not even funny! I LOVE the idea of topping it with salmon!

Mmmm Chef Michael…no wait I mean mmmmm clam chowder! Ok, caught me, I don’t like clams but I’m sure that if anyone knows how to make a yummy chowder it’s him!! Actually it would be easy to just leave the clam part out of this chowder, especially with the salmon on top (which I love).
