Ground Chicken Chili #Recipe

Calgary has been experiencing some beautiful weather this month. The snow has melted and spring is in the air. It makes you think about summer, bbq’s and outdoor fun. However, springtime also makes me think of cooking. Although we do a lot of bbq’ing, I like to keep some freezer meals on hand. No one, especially me, wants to spend a lot of time in the kitchen over the summer. After all, Canada has a short season, and I want to take full advantage of it.

One of the items I like to have on hand, is chili, which is fantastic over bbq season. You can serve it as a side, or top off your hot dogs for something different. It’s also versatile enough to use many different proteins. Make ground chicken chili, leftover rotisserie chicken, turkey, ground turkey, or the ever popular beef. Each recipe has it’s own little twist. Here’s my take for ground chicken.

Ground Chicken Chili

Ingredients
  • 1 can 796ml diced tomatoes
  • 2 cans 398ml tomato sauce
  • 2 cups chicken stock
  • 1 can 540ml black beans
  • 1 can 540ml kidney beans
  • 1lb cooked ground chicken
  • 1 large onion diced
  • 1 green pepper diced
  • 1 teaspoo chili powder (more if desired)
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • 1½ teaspoons cumin (more if desired)
Instructions
  1. In a large frypan, cook chicken, onion and green peppers
  2. place chicken mixture in slow cooker
  3. add all other ingredients
  4. stir
  5. cook on low for 8 hrs

    I love chili. This is close to my recipe but I recently added the black beans along with the kidney beans. It does make a nicer recipe.

    Good idea to use ground chicken, I usually use beef, but it’s nice to switch it up once in a while.
