Chicken Nachos – Dinner Time Or Snack Time #recipe

You have to love a plate of nachos! All that cheesy goodness in a finger food. I know I do! They make a terrific game day snack. However, how about dinner? Your kids would love it. Plus, you can get a few extra veggies inside them.

It’s super easy to do, and everyone will think they’re getting a treat, instead of a nutritious meal.

Chicken Nachos

For this particular meal, I used up some leftover chicken I had. Fortunately, the recipe is so versatile, you can use whatever leftovers you have and adjust accordingly. For example, I used chicken and taco seasoning. These nachos would be amazing with pork and bbq sauce too! So, where do the veggies come in? Well, toss your veggies in with the salsa sauce. In this recipe I used some corn. However, chopped mushrooms, onions or leftovers would work as well. Heck, throw in some finely chopped broccoli or cauliflower. Chicken Nachos

  • 2 cups leftover chicken shredded or finely chopped
  • ¾ bag of tostitos
  • 1 cup of salsa
  • 2 green onions
  • 3 cloves crushed garlic
  • 1 or 2 fresh tomatoes
  • ½ cup frozen corn
  • 2 tsp olive oil
  • 1 package taco seasoning
  • ¼ cup water
  • 1 cup favourite shredded cheese (I used a mixture)
  1. Spread nachos on a non stick cookie sheet, set aside
  2. preheat oven to 350
  3. heat oil in skillet and add garlic & chopped green onion
  4. heat for 2 minutes
  5. add salsa, taco seasoning, tomatoes, corn, chicken and water
  6. heat 5 - 7 minutes
  7. Most of the water should evaporate
  8. Drop spoonfuls of salsa mixture over tostitos
  9. top with shredded cheese
  10. bake for 15 minutes
