Double Chocolate Cookie Bar Cake #recipe

I am always looking for great new ways to use a cake mix. On their own, they can be a little boring. However, they are quick, which causes a wee bit of a dilemma. Naturally, when I come across something fast, that uses a mix, well, I simply have to try it.

That’s what happened when I found a chocolate cookie bar recipe. Of course, I had to put my own spin on it! Instead of a bar, I made a cookie bar cake and ramped up the chocolate. If you like chocolate, you’ll appreciate the addition of more. Can something be too chocolatey? I don’t think so.

When you bite into this tasty treat, you’ll get a crunch on the outside and a fudgey, chocolate centre. Now, since it’s a cookie/cake, it doesn’t really require any frosting. Though please feel free to serve with a dollop of whipped cream.

My pan was a 9″ round pan, however, you could use an 8″ round for a thicker piece.

Double Chocolate Cookie Bar Cake

  • 1 box chocolate cake mix
  • 2 eggs
  • ⅓ cup unsweetened apple sauce
  • Mixture of chocolate chips and chunks
  • (I used bakers chocolate and white chocolate chips)
  • Use as much or as little chocolate as you like, I used ¾ cup
  1. In a medium sized bowl, beat the eggs on low
  2. Add the cake mix and apple sauce, mix on low until combined
  3. Fold in your chocolate
  4. Pour into your greased and floured pan
  5. Spread evenly, mixture will be thick
  6. Bake in preheated 350 oven for 25 minutes
