Cauliflower Cheese Soup #Recipe

Cold, winter days, call for warm and comforting soups. If you’re like me, a big bowl of soup, combined with a sandwich, takes care of dinner. They’re simple to make and taste a whole lot better than the cans. Plus, you can control the seasonings. Many canned soups are over the top with salt. Frankly, I believe you can achieve deep flavour without going overboard on salt. For myself, that’s really important, since I have high blood pressure.

Taking the time to make soup is also a great way to use up vegetables. As well, if you add cheese, your kids are going to love it too.

I remember when my kids were little, cauliflower and broccoli were two veggies that weren’t very high on their list of tasty items. Admittedly, they can be a little strong. One day, I made a cheese sauce and poured it over top of the cauliflower and my oldest simply couldn’t get enough.

It’s the same with this delicious soup. Bonus is, you can swap out the cauliflower for broccoli and have a whole different, delicious soup.

Cauliflower Cheese Soup

Ingredients
  • 2 teaspoons olive oil
  • 1 small onion chopped
  • 3 cups chicken broth
  • ½ a large head of cauliflower chopped
  • 1½ cups of milk
  • 2 tablespoons flour
  • 1½ cups shredded cheese
  • salt and pepper
Instructions
  1. In a large pot, saute your onions in olive oil
  2. add your chicken broth and cauliflower
  3. bring to a boil and simmer 15 minutes
  4. remove from heat and use a hand blender to mix
  5. (only blend until desired consistency)
  6. Return to stove
  7. Put flour in a small bowl and gradually add milk until smooth
  8. Pour into your cauliflower mixture and simmer until thickening
  9. add cheese, salt and pepper
  10. stir until cheese is melted
  11. (if mixture is thicker than you like, add extra broth)
