Meatloaf Made My Way #Recipe

Everyone has a meatloaf recipe that they enjoy. Personally, I never thought I’d switch out my recipe for another one.

A few weeks ago, however, I found myself returning home from the grocery store with a large amount of lean ground beef that I’d bought at one heck of a deal. Most of it, I turned into homemade hamburgers for the freezer. After all, it was summertime and BBQ was on the menu frequently.

This particular day, I decided that I fancied meatloaf. Yet, I had some leftovers I’d been planning to use up. For example, I had roughly half a cup of pasta sauce in my fridge that needed using. What to do? It’s lean ground beef, so I needed to make sure my meatloaf wasn’t dry.

Below, you’ll find the recipe I came up with. My husband loved it. He may or may not of eaten quite a bit of the loaf. I’m not allowed to say 🙂

Meatloaf Made My Way

  • 1 carrot shredded
  • ½ onion shredded
  • ½ cup pasta sauce
  • 2 lbs lean beef
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tsp Worcestershire
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup panko
  1. Place meat and seasonings in a large bowl, mix well
  2. Add carrot, onion and pasta sauce, mix gently with wooden spoon
  3. Add panko and mix gently with hands
  4. Put mixture into a loaf pan and pat gently to fit
  5. Place in preheated 350 oven for 1 hour
